Empanadas (Veggie)
An empanada is a type of baked or fried turnover consisting of pastry and filling, common in Southern European, Latin American, and the Philippines cultures.
Ingredients
Serves 2
DOUGH
- 1 cup of flour
- 1 egg
- ½ cup water
- Pinch of salt
- 1 tbsp. baking soda
- Mix together and let rest for 30 min.
FILLING
- Fry some ground pork, ½ lb.
- Small onion, minced
- 1 jalapeno pepper, minced
- 1 smoked habanero pepper
- 1 red onion, minced
- 1 red bell pepper, minced
- 1 green bell pepper, minced
- 1 tsp. cumin
- 1 garlic clove
- 1 crushed beef boullion cube or 1 tsp. beef bouillon powder
- Pepper and salt to taste
Timing
Total Time: 60 min. or more
Prep: 45 min.
Cook: 15+ min.
Directions
- roll out dough
- cut circles out of the dough
- put 2 tsps. of fried pork mixture on one side of the circle, fold it in half (into a half-moon shape), pinch closed
- place on a plate, cover in plastic wrap and put in fridge
- the remainder of directions will be given in class

- great served with hot sauce, sour cream or chimichurri
