Gazpacho
Gazpacho

Ingredients
- ½ lb of vine-ripened Roma tomatoes, roughly chopped
- 12oz Regular size can of tomato juice or ½ of a large can
- 1 English cucumber, peeled and chopped
- ½ of a red onion, chopped
- Optional: 1 small jalapeno, seeded and minced
- 2 garlic cloves
- ½ cup of extra virgin olive oil
- 1 lime
- 2 tbsp balsamic vinegar
- 2 tsp Worcestershire sauce
- ½ tsp toasted cumin
- 1 tsp salt (preferably kosher)
- 1 tsp black pepper
- 6 basil leaves, cut into strips

TOTAL TIME: 1 HR 45 MIN
- Prep: 45 min
- Chill: 1 hr

Directions
- Mix everything but the basil in one big bowl
- Scoop mixture into a blender to puree, but leave a bit chunky
- Repeat until all ingredients are combined and place in a separate bowl
- Place the mixture in the fridge for one hour
- When serving, scoop into smaller bowls
- Garnish with a drizzle of olive oil and some of the basil

- Add a dollop of crème fraiche or sour cream when serving
